Haitian rum gives this drink all the character while the seabuckthorn adds some extra tropical notes. The dry vermouth wraps its arms around the whole and carries it all over your senses. Our homegrown peppers deliver the surprise.

RASTA MORRIS ILE DE LA REUNION, PX SHERRY LAPSANG INFUSED, ABSINTH
COCKTAIL COUPE NO ICE/ HIGH ABV
Bold and grassy flavours from the rhum caressed by the sweet and rich sherry notes and carried by the mystical aromas of a classic French absinth. A boozy drink for the spirit lovers, strong, outspoken and comfortably sweet.

HIGH WEST RYE, SWEET VERMOUTH, GRANDMONT LIQUEUR, BITTERS
COUPE NO ICE/HIGH ABV
A variation on the Brooklyn or rather the Manhatan cocktail to begin with. It was created at NYC’s legendary Milk & Honey bar by Michael Mcllroy in 2006 and named for the Brooklyn nabe. The original recipe calls for yellow Chartreuse which we replace for the Grandmont liqueur. Created by the Grandmont Distillerie who reinvents ancient and forgotten spirits and liqueurs. Combined with the spicy Double Rye from High West this creates a beautiful marriage of flavours for all you Manhattan lovers out there.
BAIJIU: JAPANESE COCKTAIL - 23
MOUTAI BAIJIU 1992, OLOROSO SHERRY, WALLNUT ORGEAT, CHOCOLATE BITTERS
COCKTAIL COUPE NO ICE/ HIGH ABV
Derived from one of the earliest cocktails in written history, originally made with cognac by Jerry Thomas for a Japanese diplomat that used to frequent his bar. We switch out the cognac for a mix of nutty sherry and Chinese Baijiu. Combined with the homemade wallnut orgeat from our garden this is pure liquid love sliding down.
For the drivers, the teetotaler or those who just don’t need it.

Choosing a drink shouldn’t be a wearisome task; it should be fun. If, however, you’re having trouble finding something you like on the menu, simply tell us what you want. We actually enjoy the challenge of finding you that perfect drink.
Apart from the strong stuff, we prepare most of the ‘extras’ - sodas, liqueurs, syrups, infusions, juices and kombucha - in house. In everything we create, we try to use the very best ingredients, sourced seasonally and locally wherever possible. Doing so helps us take the ‘guilt’ out of your guilty pleasure.
